Jfet operation can be compared to that of a garden hose the flow of water through a hose can be controlled by squeezing it to reduce the cross section and the flow of electric charge through a jfet is controlled by constricting the current carrying channel. It is easy to burn out the jfet.
When there is sufficient voltage supplied to the led and no voltage at the gate terminal the jfet is fully operational and conducts across from drain to source turning on and lighting the led. The current also depends on the electric field between source and drain analogous to the difference in pressure on either end of the hose. The arrow showing to the gate denotes that the jfet is n channel and on the other hand the arrow from the gate denotes p channel jfet. Use the scope or another dmm to measure the gate voltage.
